Some nights, I want to feel like I'm serving up a Pinterest-worthy dinner but without the actual effort. Enter: the Pulled Pork Bowl. It looks like something you would order at a trendy spot, but it's basically just throwing leftovers and toppings into a bowl. That's the kind of cooking I can get behind. The kids think the green drizzle makes it a restaurant food. Ingredients (a.k.a. stuff you need)
For the Bowl:
For the Avocado Cilantro Sauce:
Directions (a.k.a. how to throw it together) Make the sauce: Toss all sauce ingredients in a Ninja or blender. Blend until smooth. Add water a little at a time until you've got a drizzly consistency. Taste and adjust, add more salt, jalapeno, or lime if you're feeling fancy. Build your bowl: Start with rice, then lentils, then pile on pulled pork. Add diced tomatoes and green onions. Drizzle generously with your avocado cilantro sauce so it looks like you actually gave a damn. Why Moms Love This Looks impressive AF. Uses up random leftovers. Healthy(ish). Zero brain power required. Pro tip: Make a big batch of pulled pork on Sunday and turn it into tacos, sandwiches, or bowls like this all week. Future-you will thank past-you.
