5 red potatoes
3 tsp olive oil (any oil will work)
1T fresh parsley
3 cloves garlic
salt and pepper to taste
Chop garlic, parsley, and potatoes, Combine in a bowl the potatoes, garlic, parsley, salt and pepper, 1 tsp oil. Add 2 tsp oil to a non-stick skillet and heat at medium low. Add potato combination and cook covered over medium low heat for 15-20 minutes until mostly fork tender, stirring occasionally. Remove lid and increase heat to medium high. Cook for approximately 5 minutes or until potatoes form a brown crisp. Enjoy!
