Yum! I love enchiladas! This recipe was adapted from my sister in-law's enchiladas, I made a few tweaks to make it my own...
Tonight was a lazy night and I really didn't feel like cooking so I thought it would be the perfect time to dust off my crock pot... I had nothing in mind to make and just pulled random items out of the pantry and refrigerator and came up with this recipe.. It was pretty tasty! My hubster and I both had seconds and my 1 year old made a happy bowl! I didn't measure anything so I will try to get as accurate as possible.
You can add diced jalapeno for an added kick, I didn't add any because my 1 year old was partaking! This would be delicious with jalapeno corn bread... I served mine with big flaky biscuits and they were really good for soaking up the juice!

Kitty came home! After being gone for 2 nights in a storm she found her way back... I don't know if it was the cans of tuna or her own instincts but either way I am thrilled to have my little ball of fluff back!
Well we moved into our new home and our kitty "Bug" seemed to be adjusting pretty well, she even went out on the back porch to sniff around. Now bug is a complete girly girl and an inside cat so she doesn't go out much at all... A few nights ago she was outside exploring on the back porch and it started to rain and she just disappeared, that was 2 nights ago. We can't find her anywhere!!! We have a bowl of tuna on the front and back porch hoping she will smell her way home! I'll keep calling for her and praying she is safe. Please come home baby girl!!!
Okay, so I am definitely not a cake decorator but I did have fun making this cake with my 14 year old son for my stepson's birthday. The cake may not be pretty and it looks like we just slathered the frosting on (well we did)... but my stepson LOVED it and seeing the big smile on his face was pure awesomeness!
I found these Mini Burger Cookies at Betty Crocker's Website. Who came up with this idea? I mean seriously, this is a fat laden dessert in the guise of a fat laden BURGER!
It's hard to get things done when you have a baby! One thing I really need to do is shave my legs!!! It keeps getting put off.
