Well folks, it's that time of year again... December... ass freezing weather! I don't know about you but where I'm from it's cold! I'm not a cold person at all so 40 degrees is freezing! Yes I'm a wuss. One of the best things (okay just about the ONLY thing) about winter is a huge pot of chili! If you are not eating chili during winter time then you are missing out! Here is an easy (and lazy) chili that is very delicious! My one year old loves the beans in it!
You really can't go wrong with this recipe... you can even change it up! It's very versatile. You need a few spices, a variety of beans, some tomatoes, and one pound of ground beef (not shown). If you want to use all fresh ingredients nix the cans and cook up your own beans (if you have time!). I'm always on a time crunch so cans work well for me!
Brown your ground beef and season it up however you like... I love lots of garlic and LOTS of chili powder. The chili powder gives it that delicious chili flavor. You can throw in some onions and jalapenos here if you like. I add cumin sometime also.
Once the meat is brown add all of your cans... 3 (or more) types of beans, a can of Rotel, a can of tomatoes (I buy whole tomatoes then roughly chop them up). Add about 4 cups of water. Give it a good stir and let it simmer for about 3 hours... the longer it simmers the more time the flavors have to party!
