Please tell me you love garlic potatoes! These potatoes are packed full of garlic and pan-fried in a small amount of olive oil to create a heavenly taste-bud sensation!
Garlic.... the main player in this dish! I can't tell you how good these potatoes are and it's all because of the garlic! So get to chopping! I used about 3 medium cloves of garlic per 5 medium red potatoes... I'm not afraid of this potent beast but feel free to use less garlic to suit your taste!
Chop up your red potatoes and combine the garlic, salt and pepper to taste, and 1 tablespoon of parsley and a teaspoon of olive oil. Mix well!
I used very little oil for these recipes... the key is having a very good non-stick skillet. Add approximately 2 tsp of oil to the skillet. (I eyeball) Heat the skillet over medium low heat and add your potatoes. Cover, stirring occasionally, and cook for 15-20 minutes or until potatoes are mostly fork tender. Remove lid and increase heat to medium high and cook to get a nice brown crispy coating.
I can't begin to tell you how this simple dish tastes... Your potatoes will be poppin! Poppin with flavor! I think I will make some right now!!!!
Ingredients:
5 red potatoes 3 tsp olive oil (any oil will work) 1T fresh parsley 3 cloves garlic salt and pepper to taste Directions: Chop garlic, parsley, and potatoes, Combine in a bowl the potatoes, garlic, parsley, salt and pepper, 1 tsp oil. Add 2 tsp oil to a non-stick skillet and heat at medium low. Add potato combination and cook covered over medium low heat for 15-20 minutes until mostly fork tender, stirring occasionally. Remove lid and increase heat to medium high. Cook for approximately 5 minutes or until potatoes form a brown crisp. Enjoy!
