I love sushi! I love it so much I would marry it! I have maintained a low-carb lifestyle for a long time (20 years!) and sushi is one of the foods I miss the most! Here is an extremely easy and fast sushi fix that will have you saying... I DO!
1oz cream cheese
Crab meat (or imitation*)
Avocado (not shown because I ate them all!)
Slice cucumber into 8 slices about 1/4 inch thick. Top with cream cheese, crab meat, onion, and avocado... Top with a splash of soy sauce and say... mmmmmm
If using imitation crab meat be mindful of the carbs. I tried the 8 leg pack and 1 leg was roughly 4 carbs. I used 1/2 a leg (2 carbs) for this recipe.
I originally made sushi rolls using thinly sliced cucumber and cauliflower rice and the above ingredients (photo below). It was good but too messy and took too much time to make.
Makes 8 slices
5-6 carbs total
