This is a super easy 2 ingredient Spanish rice.... AND it is low carb!
For anyone on a low carb or Keto diet you are always looking to spice up the menu! Here is a simple yet tasty side dish! Pair this with chicken or beef fajitas (sans tortillas), with a scoop of sour cream and avocados and you have a scrumptious meal! I also love to make this as a side with spicy chicken! Take a raw chicken breast and dice, sautee with a tablespoon of butter and 1-2 tablespoons of salsa until chicken is fully cooked! Flavor-ful!
1 bag of frozen riced cauliflower
3-4 Tablesooons of your favorite salsa (add more to your liking)
Place the bag of caulifower into a non-stick skillet and add the salsa. Keep stirring until the cauliflower is thoroughly cooked. (I told you it was easy... stupid easy!)
Makes about 3 servings.
