MMMM MMMM MMMMMeatloaf! I am all about the comfort food! Meatloaf, if done right, is one of my family's favorite food! Making it in a cupcake pan livens it up a bit and is the perfect size for my toddler! I have made meatloaf several ways and after a unanimous decision by hungry souls, have decided to stick to this recipe! Match it with mashed potatoes and your favorite vegetable, it's sure to be a hit every time! I know my family can't get enough of it!
Ingredients:
1 pound ground beef 1/4-1/2 cup finely chopped onion 1 egg 1/2 can tomato soup 1/2 cup bread crumbs seasonings of your choice (I just use salt, pepper, and garlic powder) Topping: 2 tablespoons ketchup, 2 tablespoons tomato soup, 1-2 teaspoons mustard pinch of brown sugar. (can substitute regular sugar) Directions: Preheat oven to 350. Combine ground beef, onion, egg, soup, bread crumbs, and seasonings in a large bowl. Take off rings and mix with your hands! Once everything is thoroughly mixed, put mixture in a baking ban or in a cupcake pan. Top with topping mix and bake for 45 minutes or until meat is no longer pink in the middle. I prefer my meatloaf with the topping mix, my husband does not so I make half of it without the topping. I have tried this meatloaf with no topping and let me tell you, it is still delicious!
I can't tell you how good this is! We had no leftovers and even my 2 year old ate all of his "muffin"!
