If you have been looking for an easy, fast, and delicious casserole... Look no further!!! This Taco Casserole is always a huge hit with our family and we very rarely have leftovers. My 14 year old son, Devon, requested this for dinner tonight and he had 2 giant servings!
The ingredients... I usually omit the corn but I wanted an extra crunch today. The corn gives this casserole a nice flavor and texture. ![]()
Place the ground beef, garlic, salt, and pepper in a skillet and cook until meat is no longer pink. (Add onion or onion powder here if you want) Once the meat is browned add your tortillas, salsa, tomato soup, milk, and corn if you use corn.
Stir well and place the mixture into a casserole dish. Cover with foil and bake at 360 degrees for 30 minutes.
Remove foil and cover with as much or as little cheese as you want... We love cheese! Bake uncovered for 10 more minutes.
Let set for 5 minutes.
Dig in! Your taste buds will thank you!
This is really good topped with sour cream and a side of tortilla chips and corn.

1 pound ground beef 1 16oz tomato soup 1 16oz corn, drained (optional) 2/3 cup milk 1 cup salsa Salt Pepper Garlic Onion or Onion Powder (optional) Shredded cheese 10-14 corn tortillas cut in 1 inch cubes Directions: Preheat oven to 360 degrees. In a skillet, combine ground beef, salt, pepper, garlic, and onion (onion optional). Cook until meat is no longer pink. Add milk, soup, salsa, tortillas, and corn, if using corn. Mix well. Place mixture into casserole dish and cover with foil. Bake for 30 minutes. Remove foil and top with cheese, bake uncovered for 10 minutes. Remove from oven and allow to cool for 5-10 minutes.
