Who loves alfredo!? ME!
This is a traditional alfredo sauce that happens to be low carb! I tend to eat more low carb meals to maintain my weight. When I want to lose weight I go full speed low carb! I am not hard core enough to go keto though!
I made this sauce over low carb noodles and the entire dish is 5 carbs!!!
(Okay they really aren't noodles, they are shirataki noodles!)
I'm going to apologize in advance for my shitty pictures! I used my cell phone and well you know how great cell phone quality can be!
You only need 3 ingredients for this sauce! Well 4 if you include the black pepper, you HAVE to use black pepper in alfredo.. right!!!?
This recipe is for a single serving.
Combine 1/4 cup half and half with 2 table spoons of butter over medium heat. Cook for 2-3 minutes. Remove from heat.
Add 1/4 cup of Parmesan to your mixture and mix well.
And... that's it! Add your pepper and put over some noodles! Talk about easy right???
I served my sauce over Shirataki noodles with a few mushrooms. It would be bomb-diggity with chicken and broccoli too!
Alfredo, chicken, and broccoli is another fabulous low carb meal... FYI!
For those of you watching your carb count this dish is a whopping 5 carbs (I rounded up so it is actually less!).

Here is the carb breakdown for 1 serving:
1/4 C half and half: 2.5 carbs
1/4 C Parmesan: 0 carbs
butter: 0 carbs
mushrooms: 0.5 carbs
Shirataki noodles (2 servings I ate the whole bag you guys!): 2 carbs
Total: 5 carbs!!!

1/4 C parmesan
2 T butter
Combine half and half and butter in a sauce pan over medium heat, cook for 2-3 minutes stirring constantly. Remove from heat, add parmesan and mix until smooth, add pepper. Serve over your favorite "noodles".
Serving size: 1 (makes 1/2 cup)
